Creamy mushroom & spinach pasta

Mix together the tagliatelle and mushrooms in a parmesan-creme Fraiche sauce for a quick, low-calorie meal that takes only 25 minutes


  • 2 tbsp olive oil
  • 1 small onion, chopped finely
  • 150g baby mushrooms, halves
  • 150g Tagliatelle
  • 2 cloves of garlic, crushed
  • 200g low-fat creme fraiche
  • 15g grated parmesan, or a vegetarian substitute
  • 120g baby spinach
  • 1/2 tsp chili flakes (optional)


  1. In a large saucepan heat the oil. Once the oil is heated, fry the onions and mushrooms for 10 minutes or until they are softened slightly. Cook the pasta according to the package instructions.
  2. Cook the garlic in the same pan as the mushrooms for 2 minutes more. Stir in the parmesan and creme fraiche, then add the baby spinach. Set aside.
  3. Drain the pasta and let it cool on the pan. Mix the cream mushroom sauce with the pasta. Return to the heat and cook for 5 minutes. To loosen the pasta slightly, add enough of the reserved water. Season the dish with black pepper, and garnish with chili flakes if desired.
